In 100 bites, or foodstuffs, Dr. O’Connell explores American history – from maize to genetically modified foods.  Each tidbit is a fascinating look at the origin, importance, and place in the building of the nation and includes a few recipes (Roasted Beavertail anyone?) along the way.  This is a must-have possession for any American History teacher, foodie, or passionate cook.
